Navratras are being celebrated across the nation. Whole India is resonating with the sound of Jai Mata Di. Dandiyas are being organised, pandals are built everywhere, people are dancing to the tunes of bollywood music , all in all whole country is immersed in festive mood. Then there those who are observing fast throughout the nine days, though Mata Rani (Goddess Durga) gives enough strength to go through nine days keeping fast easily but some snacks that too healthy and can be eaten during fast, are very important. So I am sharing super easy and super yummy fast recipe. Lets get started.
4 medium sized potatoes(boiled and peeled)
kuttu flour (buckwheat flour) 1 cup
2 green chillies, finely chopped
rock salt as per taste
black pepper as per taste
few cashew nuts coarsely chopped
ground coconut for garnishing
Mash the boiled potatoes in a bowl, add kuttu flour to it, green chillies, rock salt, black pepper, raisins, cashew nuts and mix well to form a dough.
Make small balls of the dough and flatten then one by one with the help of rolling pin, keep at least half a inch thickness.
Now you can either use air fryer or bake them in oven or frying pan for shallow fry.
I generally bake the cutlets , spraying some olive on the cutlets and baking tray, line them in baking tray, bake for 5 mins at 220 degree Celsius or until it changes to dark brown colour. Once done, take them out from the oven and coat them with ground coconut. serve them hot with green and red condiments. Since these are baked they tend to be little dry but you can add some olive oil while making the dough to keep them little soft . I hope you enjoy it and happy Navratras.
